My letterhead is embodied into each precedent, such as a letter and I want to change the letterhead to include my logo. Thanks.

Hi Michelle, I don't know if there is a bulk way of doing this. However, if you go to new document at the top under details & correspondence and then on the side when you select the document type, if you right click edit it will open the word document you can change what you need then click save and close. A pop up will appear asking for the reason of change.

Megan's answer above is the perfect way to do this. If you edit your Letter Document Type through the method Megan has outlined, any document that uses this Document Type will have the updated letterhead.
