Thank you for posting to LEAP Community and sorry to hear about the issue you are having.
We do currently have the LEAP Outlook Add-in in New Outlook. You can enable this by following the instructions found on our Community Article. Whilst its features may be limited, it will allow you to save emails in New Outlook, and we are working on improving this feature.
Alternatively, you can disable New Outlook by turning off the "Try the new Outlook" toggle in the top right corner of Outlook and continue to use the traditional Save to Matter button. Microsoft has confirmed that they will continue to support Classic Outlook until at least 2029.
