I have tried clicking on all options, and cannot see where I can switch this over - nothing has been added to this brand new matter, and I have been on chat for over 30 minutes saying I am next?

If you go into the matter and click on the Matter Type on the left hand side, it will bring up a new Tab and on the right hand side you can change your client. Hopefully this is what your after?
